At some point most places switched over to the thick chewy stuff, mostly because it's quicker and the dough is more forgiving. We kept doing it the old way. Not out of stubbornness exactly, though there's some of that in it too.
It takes longer and it's more work, and honestly that's the whole point.
Pizza, salad, pasta and dessert, out for lunch and again at dinner Monday through Saturday. If you're bringing a crowd, call ahead and we'll save you the party room.
