When Jim's opened in 1969, McKinney had about 15,000 people in it and nowhere to get a pizza. Fifty-seven years later the town has grown past 220,000 and we're still here, still family owned, still making the dough by hand every morning from the recipe we started with.

How we got here

1969

Jim opens the doors

A small storefront, four booths, and a single deck oven. Pizza was still a novelty in this part of Texas. Half the town came in that first month just to see what it was.

1970s

The after-game spot

McKinney High football let out and the place filled up. Coaches ran tabs. A few of those kids bring their own grandkids in now and still order the same thing.

1980s

The buffet starts

Lunch was slow, so we put the pizzas on a warmer and charged one price. It's run six days a week ever since and it's still how most people meet us.

1990s

The chains arrive

Four national pizza chains opened in McKinney within about five years. We didn't change the recipe, skimp on the cheese, or start taping coupons to the door. People kept coming.

2000s

Eldorado Parkway

We moved into the current space on West Eldorado. Bigger dining room, same ovens, same booths pulled out of the old place because people asked us to.

2010s

Feeding the whole league

Catering grew into its own thing. Youth sports, church groups, teacher appreciation weeks, office lunches. Some Saturdays we send out more pizza than we serve in the dining room.

Today

Same dough, same family

Third generation behind the counter. One location, no franchise plans, no investors. The dough still gets made by hand before the sun is all the way up.
